Ingredients

Directions

  1. Preheat oven to 375ðF (190ðC) and place a rack in the lower third of the oven.
  2. Butter an 8-inch springform pan and coat the buttered surface with powdered cocoa.
  3. Melt the Baker's semi-sweet chocolate and 1/2 cup of lightly salted butter in a double boiler over hot, not boiling, water. Stir until smooth and do not rush to prevent burning.
  4. In a large mixer bowl, beat 6 egg yolks at high speed. Gradually add 3/4 cup of granulated sugar, beating until the mixture is pale yellow, thick, and fluffy, about 4 to 6 minutes.
  5. Add the melted chocolate mixture to the egg yolk mixture and beat until completely smooth and combined.
  6. Stir in 1/2 teaspoon vanilla extract and 2 to 4 teaspoons of crème de cacao, Kahlua, or dark rum. Beat until blended.
  7. In a medium mixer bowl, beat 6 egg whites at high speed until soft peaks form.
  8. Gradually beat the remaining 1/4 cup of granulated sugar into the egg whites. Continue beating until stiff but not dry peaks form.
  9. Gently but thoroughly fold the beaten egg whites into the chocolate mixture using a spatula, being careful not to deflate the batter.
  10. Pour the batter evenly into the prepared springform pan and smooth the top.
  11. Bake for 15 minutes at 375ðF (191ðC).
  12. Reduce oven temperature to 350ðF (175ðC) and bake for another 15 minutes.
  13. Reduce oven temperature to 250ðF (120ðC) and bake for an additional 30 minutes.
  14. Turn off the oven and prop the door open slightly. Allow the cake to remain in the warming oven for 30 minutes.
  15. Remove the cake from the oven. Cover the top with damp paper towels and let it stand for 5 minutes.
  16. Remove the paper towels and allow the cake to cool completely in the pan. The dome may crack and collapse; this is normal.
  17. Gently press down on the top of the cake to smooth the surface.
  18. Unmold the cake from the springform pan and transfer it to a serving platter.
  19. To make the frosting, melt 14 ounces of Baker's semi-sweet chocolate in a double boiler over hot, not boiling, water.
  20. Using a wooden spoon, vigorously mix 1 cup of sour cream into the melted chocolate until smooth and glossy.
  21. Pour the chocolate frosting over the cooled cake.
  22. Let the frosting cool and harden before slicing and serving.
