Directions
-
Preheat your oven to 350&# 194;°F (175ðC).
-
Process chocolate wafers (such as Teddy Grahams) into fine crumbs in a food processor or zip-top bag.
-
Mix the cookie crumbs with 1/4 cup melted butter and 2 tablespoons sugar until evenly coated.
-
Press the mixture firmly onto the bottom and slightly up the sides of a 9-inch springform pan.
-
Freeze the crust for 5 minutes to set, then bake at 350ðF (177ðC) for 10 minutes. Remove and allow to cool completely.
-
Reduce oven temperature to 275ðF (135ðC).
-
Melt 1/2 cup of semi-sweet chocolate chunks in a heatproof bowl set over a pan of simmering water (double boiler), stirring until smooth.
-
Remove from heat and stir in 1/4 cup whipping cream and 1/4 cup Kahlua until the mixture is glossy and combined. Set aside.
-
In a large bowl, beat 24 oz softened cream cheese and 1 cup sugar until light and fluffy.
-
Mix in 1/3 cup cocoa powder until fully incorporated.
-
Add the melted chocolate mixture to the cream cheese mixture and blend until smooth.
-
Beat in 3 eggs one at a time, mixing just until blended after each addition.
-
Stir in 1 teaspoon vanilla extract.
-
Pour the batter over the prepared crust.
-
Bake at 400ðF (204ðC) for 10 minutes, then reduce heat (135ðC)to 275ðF and bake for an additional 45 minutes.
-
The cheesecake is done when the edges are set but the center still jiggles slightly.
-
Turn off the oven and crack the door open, letting the cheesecake cool inside for 1 hour.
-
While the cheesecake cools, melt the remaining 1 cup semi-sweet chocolate chunks using the double boiler method.
-
Stir in the remaining 1/4 cup whipping cream and 2 tablespoons Kahlua until the ganache is smooth.
-
Run a knife around the edge of the pan to loosen the cake, then remove the springform ring.
-
Pour the chocolate ganache over the top of the cheesecake and spread evenly.
-
Refrigerate the cheesecake for at least 6 hours, or overnight, to allow it to set firmly.
-
Before serving, whip the remaining 1/2 cup whipping cream with 1 tablespoon powdered sugar until soft peaks form.
-
Pipe whipped cream onto slices or the whole cake and garnish with additional chocolate chips if desired.
-
Store leftovers covered in the refrigerator.
