Ingredients

Directions

  1. Preheat oven to 325ðF (160ðC). Prepare a 9-inch springform pan by greasing the bottom and sides.
  2. In a medium bowl, combine chocolate wafer crumbs with melted butter until evenly moistened.
  3. Press the crumb mixture firmly into the bottom and about 2 inches up the sides of the prepared springform pan.
  4. In a large bowl, beat the softened cream cheese and sugar until the mixture is very smooth and free of lumps.
  5. Add eggs one at a time, beating just until blended after each addition. Do not overmix.
  6. Beat in the creme de menthe liqueur (or mint extract with green food coloring) and melted white chocolate until fully incorporated.
  7. Pour the filling over the prepared crust in the pan.
  8. Bake for 50 minutes, or until the edges are set but the center still has a slight jiggle.
  9. Remove from oven and immediately run a thin knife around the edge of the pan to loosen the cake and prevent cracking.
  10. Allow the cheesecake to cool completely at room temperature.
  11. Cover and refrigerate overnight to allow the cheesecake to set firmly.
  12. To garnish, use a vegetable peeler to create curls from a frosted mint chocolate bar.
  13. Decorate the chilled cheesecake with the chocolate curls before serving.
