Description

This decadent Chocolate Raspberry Cheesecake is a showstopper dessert that balances the tang of cream cheese with the sweetness of chocolate and the tartness of raspberries. The base is a buttery cookie crust, supporting a dense, luscious filling. Instead of a simple swirl, this recipe uses distinct drops of chocolate and raspberry batter for a unique marbled effect. Finished with a smooth, homemade chocolate ganache and a dusting of whipped cream, it offers a complex flavor profile and silky texture. Perfect for birthdays, holidays, or any occasion where you want to impress guests with a homemade treat that feels luxurious yet approachable.

Ingredients

Directions

  1. Preheat oven to 325F (165C).
  2. Finely crush 18 creme-filled cookies to make 1 1/2 cups of crumbs.
  3. Melt 6 ounces of semi-sweet chocolate chips and let cool slightly; set aside for the batter.
  4. In a small bowl, combine the cookie crumbs and 2 tablespoons of melted margarine.
  5. Press the crumb mixture firmly and evenly onto the bottom of a 9-inch springform pan.
  6. In a large mixing bowl, beat 24 ounces of softened cream cheese and 1 1/4 cups of sugar at medium speed until smooth and well blended.
  7. Add 3 eggs one at a time, beating well after each addition until just incorporated.
  8. Blend in 1 cup of sour cream and 1 teaspoon of vanilla extract until smooth.
  9. Pour the plain cheesecake batter over the prepared crust.
  10. In a separate medium bowl, beat the remaining 8 ounces of cream cheese with the melted chocolate until smooth.
  11. Stir 1/3 cup of strained raspberry preserves into the chocolate cream cheese mixture.
  12. Drop rounded tablespoons of the chocolate-raspberry batter over the plain batter in the pan; do not swirl.
  13. Bake for 1 hour and 25 minutes, or until the edges are set and the center is slightly jiggly.
  14. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour to prevent cracking.
  15. Loosen the cake from the rim of the pan and let it cool completely before removing the rim.
  16. To make the ganache, combine 6 ounces of semi-sweet chocolate chips and 1/4 cup of whipping cream in a small saucepan.
  17. Heat over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth.
  18. Spread the warm chocolate ganache evenly over the top of the cooled cheesecake.
  19. Chill the cheesecake in the refrigerator for at least 4 hours or overnight before serving.
  20. Garnish with additional whipped cream, fresh raspberries, and mint leaves if desired.
