Description

This decadent Chocolate Raspberry Cheesecake is a show-stopping dessert that balances the richness of cream cheese with the bright acidity of raspberry preserves. The base is a buttery cookie crust, supporting a luscious filling that features a beautiful marbled effect of plain and chocolate-infused batter. Topped with a smooth, homemade chocolate ganache, this cake offers a complex flavor profile and a dense, creamy texture that melts in your mouth. Its perfect for birthday celebrations, holidays, or any special occasion where you want to impress guests. The contrast between the dark chocolate and the red raspberry creates not just a visual treat but a sophisticated taste experience that pairs beautifully with coffee or tea.

Ingredients

Directions

  1. Preheat oven to 325F (165C). Grease a 9-inch springform pan lightly.
  2. Combine the creme-filled cookie crumbs and melted margarine in a bowl; press firmly onto the bottom of the prepared pan to form a crust.
  3. Melt 6 ounces of semi-sweet chocolate chips and let cool slightly; set aside.
  4. In a large bowl, beat 24 ounces of softened cream cheese and sugar with an electric mixer on medium speed until smooth and well blended.
  5. Add eggs one at a time, beating well after each addition until just incorporated.
  6. Blend in sour cream and vanilla extract until smooth; pour this plain batter over the crust.
  7. In a separate bowl, beat the remaining 8 ounces of cream cheese with the melted chocolate until well blended.
  8. Stir the strained raspberry preserves into the chocolate cream cheese mixture until combined.
  9. Drop rounded tablespoonfuls of the chocolate-raspberry batter over the plain batter in the pan; do not swirl.
  10. Bake for 1 hour and 25 minutes, or until the center is almost set.
  11. Turn off oven and let cheesecake cool in the oven with door slightly ajar for 1 hour to prevent cracking.
  12. Loosen the cake from the rim of the pan and remove the ring; cool completely on a wire rack.
  13. For the ganache, melt the remaining 6 ounces of chocolate chips and 1/4 cup whipping cream over low heat, stirring until smooth.
  14. Spread the warm chocolate ganache evenly over the top of the cooled cheesecake.
  15. Refrigerate for at least 4 hours or overnight to chill and set.
  16. Garnish with additional whipped cream, fresh raspberries, and mint leaves before serving.
