Description

This Chocolate Raspberry Cheesecake is a show-stopping dessert that balances intense chocolate flavor with bright, tart raspberry notes. The base is a buttery Oreo crust, supporting a creamy, dense cheesecake filling. The magic happens when dollops of chocolate-infused cream cheese and raspberry preserves are dropped into the batter, creating beautiful marbled pockets of flavor in every slice. Finished with a smooth, homemade chocolate ganache, this cake feels luxurious and indulgent. Its perfect for birthdays, holidays, or whenever you need a serious sweet treat. While it requires chilling time, the steps are straightforward, making it an impressive yet manageable project for home bakers looking to elevate their dessert game.

Ingredients

Directions

  1. Preheat the oven to 325F (165C). Grease a 9-inch springform pan lightly.
  2. In a small bowl, combine the Oreo cookie crumbs and melted butter until the mixture resembles wet sand.
  3. Press the crumb mixture firmly and evenly onto the bottom of the prepared springform pan to form the crust.
  4. In a large mixing bowl, beat 24 ounces of the softened cream cheese with the sugar on medium speed until smooth and well blended.
  5. Add the sour cream and vanilla extract to the cream cheese mixture and beat until incorporated.
  6. Beat in the eggs one at a time, mixing just until combined; do not overmix.
  7. Pour this plain cheesecake batter over the prepared crust in the pan, smoothing the top.
  8. In a separate small bowl, combine the remaining 8 ounces of cream cheese with 6 ounces of melted semisweet chocolate chips; mix until smooth.
  9. Stir the strained raspberry preserves into the chocolate cream cheese mixture until well combined.
  10. Drop rounded tablespoons of the chocolate-raspberry mixture randomly over the surface of the plain cheesecake batter; do not swirl.
  11. Bake at 325F (163C) for 1 hour and 25 minutes, or until the edges are set but the center still jiggles slightly.
  12. Turn off the oven and crack the door open, letting the cheesecake cool inside for 1 hour to prevent cracking.
  13. Remove from the oven and run a knife around the rim of the pan to loosen the cake. Cool completely on a wire rack.
  14. For the ganache, place the remaining 6 ounces of chocolate chips and whipping cream in a heatproof bowl.
  15. Warm the chocolate and cream over low heat (or in short bursts in the microwave), stirring gently until completely smooth and glossy.
  16. Spread the warm chocolate ganache evenly over the top of the cooled cheesecake.
  17. Refrigerate the cheesecake for at least 4 hours, or overnight, until firm. Garnish with fresh raspberries and whipped cream before serving.
