  1. Separate 3/4 cup of milk from the remaining 1/4 cup.
  2. Sprinkle the unflavored gelatin over the 1/4 cup of cold milk and let it soak for 5 minutes to bloom.

  5. Remove the chocolate mixture from heat and beat vigorously with a rotary beater or whisk until the mixture is cool to the touch and well-blended.
  6. Stir the bloomed gelatin into the warm chocolate mixture until fully dissolved.
  7. Add the sugar and salt to the chocolate mixture, stirring until completely dissolved.
  8. Allow the chocolate mixture to cool to room temperature, stirring occasionally.
  9. Once cooled, stir in the heavy cream and vanilla extract.
  10. Refrigerate the mixture until it is cold and slightly thickened, but not yet set (about 30-45 minutes).
  11. Place the bowl containing the chocolate mixture into a larger bowl filled with cracked ice or ice water.
  12. Whip the mixture continuously with a rotary beater or hand mixer until it becomes fluffy, thick, and holds soft peaks, resembling whipped cream.
  13. Immediately spoon the whipped cream into individual serving molds, glasses, or one large mold.
  14. Chill in the refrigerator until firm enough to unmold or serve, about 2 hours.
  15. If using molds, dip the bottom briefly in warm water to release before unmolding onto plates.
