Description

These Chocolate Liqueur Shells are a sophisticated dessert that combines rich semi-sweet chocolate with a light, airy mousse infused with Tia Maria and Cointreau. The glossy chocolate shells provide a satisfying snap, while the interior mousse offers a smooth, velvety texture with subtle notes of coffee and orange. This recipe is ideal for holiday parties, dinner parties, or any special occasion where you want to impress guests with a homemade treat. The combination of flavors is balanced and not overly sweet, making it a delightful finish to a meal. While it requires some patience to set the shells and chill the mousse, the result is well worth the effort. Serve these individual portions chilled for the best experience.

Ingredients

Directions

  1. Melt the semi-sweet chocolate in a bowl over hot water or in short bursts in the microwave, stirring until smooth.
  2. Using a spoon, smear the melted chocolate evenly over the inside of 12 paper cups to form shells, leaving a small rim at the top.
  3. Refrigerate the cups for 15-20 minutes until the chocolate shells are set and firm.
  4. While the shells chill, melt the white chocolate gently over low heat or in the microwave.
  5. Remove the white chocolate from heat and quickly beat in the egg yolks until fully incorporated.
  6. In a separate clean bowl, beat the egg whites until stiff peaks form.
  7. Stir the Tia Maria and Cointreau into the white chocolate mixture, adding yellow food coloring if desired.
  8. Gently fold one-third of the egg whites into the chocolate-liqueur mixture to lighten it.
  9. Carefully fold in the remaining egg whites in two additions, being careful not to deflate the mixture.
  10. Spoon the mousse mixture into the prepared chocolate shells, filling them almost to the top.
  11. Refrigerate the filled shells for at least 2 hours, or until the mousse is set.
  12. Serve chilled in the paper cups.
