Description

Indulge in the ultimate chocolate experience with these Trinity Parfaits, featuring three distinct layers of luxurious cream. The base is a deep, glossy dark chocolate ganache whipped into a smooth mousse. The middle layer offers a lighter, cocoa-infused cream with a subtle vanilla hint, providing a textural contrast. The top layer is a speckled chocolate cream, where finely grated chocolate is folded into whipped cream for a rustic, elegant finish. Each layer brings a different intensity of chocolate flavor, creating a complex and satisfying dessert. Perfect for special occasions or when you want to impress guests with a sophisticated yet manageable treat, these parfaits are best served chilled to maintain their structure and richness.

Ingredients

Directions

  1. Set up a double boiler by heating 1 inch of water in the bottom half over medium heat.
  2. Place 8 ounces of semisweet chocolate, broken into 1/2-ounce pieces, in the top half of the double boiler.
  3. Cover tightly with plastic wrap and heat for 8 to 10 minutes, or until melted.
  4. Remove from heat and stir until the chocolate is completely smooth.
  5. Transfer the melted chocolate to a stainless steel bowl and set aside to cool slightly.
  6. In the well-chilled bowl of an electric mixer fitted with a whisk, beat 2 1/2 cups heavy cream and 2 tablespoons sugar until stiff peaks form, about 1 1/2 minutes.
  7. Remove the bowl from the mixer and use a hand whisk to blend 1/4 of the whipped cream into the melted chocolate until smooth.
  8. Gently fold this chocolate mixture into the remaining whipped cream using a rubber spatula.
  9. Transfer the dark chocolate cream to a bowl, cover with plastic wrap, and refrigerate.
  10. For the cocoa cream, combine 2 cups heavy cream, 1/2 cup sugar, 3/4 cup unsweetened cocoa, and 1/2 teaspoon vanilla extract in a clean, chilled mixer bowl.
  11. Mix on medium speed until stiff peaks form, about 4 to 5 minutes.
  12. Transfer the cocoa cream to a bowl, cover, and refrigerate.
  13. For the speckled cream, beat the remaining 2 cups heavy cream, 2 tablespoons sugar, and 1/2 teaspoon vanilla extract in a clean, chilled bowl until stiff peaks form, about 1 1/4 minutes.
  14. Remove from mixer and gently fold in 4 ounces of finely grated semisweet chocolate.
  15. Transfer the speckled cream to a bowl, cover, and refrigerate for at least 30 minutes.
  16. Fill a pastry bag (without a tip) with the dark chocolate cream and pipe a 1/2 cup layer into the bottom of each glass or snifter.
  17. Fill a clean pastry bag with the cocoa cream and pipe an even layer over the dark chocolate layer.
  18. Fill a clean pastry bag with the speckled chocolate cream and pipe the final layer on top.
  19. Refrigerate the parfaits until just a few minutes before serving.
