Description

This decadent Chocolate Velvet Cheesecake is a showstopper dessert perfect for celebrations. The base features a crunchy crust of vanilla wafers, pecans, and melted margarine, providing a sweet crunch. The filling is incredibly dense and fudgy, thanks to the combination of cream cheese, eggs, and melted semi-sweet chocolate chips. A splash of almond liqueur adds a sophisticated aromatic depth that pairs beautifully with the chocolate. Topped with a tangy sour cream layer, this cake balances richness with brightness. It requires chilling time to set properly, making it ideal for make-ahead events. Serve slices cold for the best texture and flavor experience.

Ingredients

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine vanilla wafer crumbs, chopped pecans, 3 tablespoons granulated sugar, and melted margarine. Mix until the crumbs are evenly moistened.
  3. Press the crumb mixture firmly onto the bottom and slightly up the sides of the prepared springform pan. Bake for 10 minutes, then remove from oven and allow to cool.
  4. In a large bowl, beat the softened cream cheese and brown sugar together until smooth and creamy, about 2-3 minutes.
  5. Add the eggs one at a time, beating well after each addition. Mix in the melted semi-sweet chocolate chips and almond flavored liqueur until fully incorporated.
  6. Pour the chocolate cheesecake batter over the cooled crust. Bake for 40-45 minutes, or until the center is almost set but still slightly jiggly.
  7. While the cheesecake bakes, combine the sour cream and remaining 2 tablespoons of granulated sugar in a small bowl.
  8. Remove the cheesecake from the oven. Spread the sour cream mixture evenly over the top of the hot cheesecake.
  9. Return to the oven and bake for an additional 5-10 minutes, just until the top layer sets.
  10. Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for 1 hour to prevent cracking.
  11. Remove from oven, loosen from the rim of the pan, and cool completely on a wire rack. Refrigerate for at least 4 hours or overnight before slicing and serving.
