Directions
-
Rinse the Great northern beans, Lima beans, and Kidney beans under cold water. If using dried beans, soak them overnight in water, then drain.
-
Peel and cube the potatoes into 1-inch chunks. Set aside.
-
Dice the large onions and mince the garlic cloves.
-
In a large slow cooker or Dutch oven, sauté the diced onions in a little oil until soft and translucent, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
-
Add the rinsed beans, barley, cubed potatoes, and 15 oz of tomato sauce to the pot.
-
Pour in enough water or vegetable broth to cover the ingredients by about 2 inches.
-
Season generously with salt and pepper to taste. Stir well to combine all ingredients.
-
Cover and cook on low heat for 8-12 hours, or on high for 4-5 hours, until the beans and barley are tender and the potatoes have started to break down slightly.
-
Taste and adjust seasoning with more salt or pepper if needed before serving.
