Christmas Stollen
Description
Christmas Stollen is a classic German fruit bread that embodies the warmth and richness of the holiday season. This dense, rich loaf is packed with candied citrus peel, raisins, and almonds, creating a complex texture that is both chewy and tender. The dough is enriched with butter and eggs, giving it a soft, cake-like crumb that holds up well to slicing. Traditionally dusted generously with powdered sugar, this sweet treat pairs beautifully with coffee or tea. It is an essential centerpiece for Christmas morning or a thoughtful gift for loved ones. While it requires some patience for rising, the result is a timeless dessert that captures the spirit of the holidays.Ingredients
Directions
-
Pour milk into a saucepan and heat until scalding, then remove from heat.
-
Stir in 1/2 cup of the granulated sugar and the salt; let the mixture cool to lukewarm.
-
In a large bowl, dissolve the active dry yeast in 1/4 cup warm water and let sit for 5 minutes until foamy.
-
Pour the lukewarm milk mixture into the yeast solution.
-
Stir in 1 cup of the sifted flour.
-
Beat the dough with an electric mixer or egg beater until smooth.
-
Cover the bowl with a cloth towel and let the dough rise in a warm place for 1 hour and 30 minutes, or until doubled in bulk.
-
Punch down the dough in the bowl.
-
Fold in 1/2 cup finely chopped candied citron, 1/2 cup finely chopped candied cherries, 1 cup slivered almonds, grated rind of 1 lemon, and 1 cup seedless raisins.
-
Add 2 beaten eggs, 3/4 cup (1 1/2 sticks) softened butter, and 1/4 teaspoon nutmeg.
-
Stir in 3 more cups of flour; mix until the dough is smooth.
-
Turn the dough out onto a lightly floured surface.
-
Knead, working in enough of the remaining flour to make the dough smooth and elastic.
-
Divide the dough into two halves; roll each portion into an oval, about 1/2 inch thick.
-
Melt the remaining 1/4 cup (1/2 stick) butter in a small saucepan.
-
Brush the melted butter over the ovals.
-
In a small bowl, combine 1/2 teaspoon cinnamon with the remaining 2 Tbsp granulated sugar.
-
Sprinkle the cinnamon-sugar mixture evenly over the ovals.
-
Fold the ovals in half lengthwise.
-
Place them on a buttered baking sheet.
-
Twist the ends of each oval toward each other to form a crescent shape.
-
Loosely cover the stollen with wax paper and a cloth towel.
-
Let the stollen rise in a warm place for about 1 hour, or until doubled in bulk.
-
Preheat the oven to 350 degrees F (175 degrees C).
-
Bake the stollen for 45 minutes, or until golden brown.
-
In a small bowl, combine 2/3 cup sifted confectioners' sugar with enough hot water to make a thick icing.
-
Dribble the icing over the hot stollen.
-
Let the stollen cool completely before slicing.
