Description

This vibrant dish features tender chicken breasts marinated in a refreshing blend of orange, lemon, and lime juices, then pan-seared until golden. The bright citrus flavors penetrate the meat, creating a juicy and aromatic base. It is finished with a homemade red onion relish that adds a perfect balance of sweetness and sharp acidity. The combination of zesty marinade and sweet-savory relish makes this an elegant yet simple weeknight dinner. Serve with rice or roasted vegetables for a complete meal that feels special without requiring complex techniques.

Ingredients

Directions

  1. In a medium bowl, combine thawed frozen orange juice concentrate, lemon juice, lime juice, chicken broth granules, and minced fresh cilantro to create the marinade.
  2. Add the skinned and boned chicken breast halves to the bowl, turning them to coat evenly in the citrus mixture.
  3. Cover and refrigerate to marinate for at least 1 hour to allow flavors to penetrate.
  4. Remove chicken from the marinade, draining well, and reserve the liquid marinade for cooking.
  5. Lightly dust the chicken breasts with all-purpose flour, shaking off any excess.
  6. In a large non-stick frying pan, melt butter over medium heat.
  7. Add the chicken breasts to the pan and cook for about 4 minutes until the bottom side is golden brown.
  8. Flip the chicken and cook for 1 more minute.
  9. Pour the reserved marinade into the pan around the chicken.
  10. Continue cooking, turning the chicken occasionally, for about 10 minutes or until the liquid reduces and the chicken is cooked through.
  11. Transfer the cooked chicken to a serving platter.
  12. Sprinkle the chicken with fresh lemon, lime, and orange zest.
  13. To make the relish, mix diced red onion, butter, and sugar in a small saucepan.
  14. Cook the onion mixture over medium heat for about 4 minutes until the onions are barely limp.
  15. Add vinegar and water to the saucepan and stir well.
  16. Cook for 3 more minutes, stirring occasionally, to let the flavors meld.
  17. Remove from heat and stir in anise seed.
  18. Top each chicken breast with a heaping tablespoon of the warm red onion relish before serving.
