Cod Cobbler is a hearty, comforting dish that combines tender white fish with a rich, creamy cheese sauce, all crowned with golden, savory scones. Unlike sweet fruit cobblers, this savory version uses flaky cod fillets nestled in a velvety béchamel-style sauce infused with grated cheese. The topping consists of a quick scone dough mixed with butter, flour, and extra cheese, which bakes into a crisp, golden crust that absorbs the delicious flavors below. It’s a perfect weeknight dinner that feels elegant enough for guests but simple enough for busy evenings. The combination of the soft, moist fish and the sturdy, cheesy topping creates a wonderful texture contrast. Serve it with a side of steamed greens or crusty bread to soak up the remaining sauce.

Ingredients

Directions

  1. Preheat your oven to 450°F (230°C). Lightly grease a round ovenproof dish.
  2. Place the skinless cod fillets in a single layer in the bottom of the prepared dish.
  3. In a saucepan, melt the 2 oz of butter over medium heat.
  4. Stir in the 2 oz of flour and cook for 1 minute to remove the raw flour taste.
  5. Gradually whisk in the 1/2 liter of milk, ensuring there are no lumps.
  6. Simmer gently until the sauce thickens enough to coat the back of a spoon.
  7. Remove from heat and stir in the 3 1/2 oz of grated cheese until melted and smooth.
  8. Pour the cheese sauce evenly over the cod fillets.
  9. In a large bowl, combine the flour for the scones (approx 8 oz based on context, or adjust to match dough consistency), 2 oz of cold cubed butter, 1 tsp baking powder, and a pinch of salt.
  10. Rub the butter into the flour mixture with your fingertips until it resembles coarse breadcrumbs.
  11. Add the 2 oz of grated cheese (Cheddar or Parmesan) to the flour mixture.
  12. Crack the egg into the mixture and add just enough milk to bind it into a soft, workable dough. Do not overmix.
  13. Turn the dough out onto a floured surface and roll it out to a thickness of about 1/2 inch.
  14. Cut the dough into small rounds using a scone cutter or a glass.
  15. Arrange the scone rounds on top of the sauced fish, covering the surface as much as possible.
  16. Brush the top of the scones lightly with a little milk.
  17. Sprinkle additional grated cheese over the top of the scones.
  18. Bake in the preheated oven for 25-30 minutes, until the scones are golden brown and the fish is cooked through.
  19. Let stand for 5 minutes before serving.
