Conchas (Coiled Sweet Rolls)
Description
Conchas are beloved Mexican sweet breads, perfect for afternoon coffee or holiday celebrations. This recipe creates tender, fluffy rolls topped with a distinctive, crunchy meringue-like sugar crust. The contrast between the soft, slightly sweet dough and the crisp, sugary shell is irresistible. While traditionally shaped like seashells, these coiled rolls offer a beautiful spiral presentation. They are best enjoyed fresh from the oven, warm and fragrant. A classic treat that brings a taste of Mexico to any table, requiring simple pantry staples but rewarding effort with delicious results.Ingredients
Directions
-
In a large bowl, combine 3/4 cup flour, sugar, salt, and undissolved yeast.
-
Cut in softened butter or margarine until the mixture resembles coarse crumbs.
-
Add warm water and beat on medium speed for 2 minutes, scraping down the bowl occasionally.
-
Add eggs and 1/2 cup flour, then beat on high speed for 2 minutes, scraping down the bowl.
-
Stir in enough additional flour to form a stiff dough.
-
Turn dough out onto a lightly floured surface and knead until smooth and elastic, about 5 to 10 minutes.
-
Place dough in a greased bowl, turning to grease the top, cover, and let rise in a warm place until doubled in size.
-
Punch dough down and divide into two equal halves.
-
On a lightly floured board, roll one half of the dough into a 15x12-inch rectangle.
-
Spread with 2 tablespoons of softened butter, fold in half, and roll out again to a 15x12-inch rectangle.
-
Spread with another 2 tablespoons of butter, fold in half, and roll out to an 18x6-inch rectangle.
-
Cut the dough lengthwise into six 1-inch wide strips.
-
Fold each strip in half lengthwise to create a 1/2-inch wide strip.
-
Gently roll each strip between your palms to round and lengthen it into a rope about 1/4 to 1/2 inch in diameter.
-
Hold one end firmly and wind the dough loosely around itself to form a coil, tucking the end underneath.
-
Place coils on greased baking sheets about 2 inches apart. Repeat with the remaining dough.
-
Cover and let rise in a warm place until doubled in size.
-
While rolls rise, heat honey until it is thin and pourable.
-
Gently brush the risen rolls with half of the honey and sprinkle with chopped almonds.
-
Bake at 400&# 194;°F (204ðC) for 15 minutes, or until golden brown.
-
Remove from baking sheets and cool on wire racks.
-
Drizzle the warm rolls with the remaining honey before serving.
