Concord Grape Jelly recipe image

This classic Concord grape jelly captures the deep, robust flavor of fresh grapes in a smooth, glossy spread. The high sugar content balances the natural tartness of the fruit, creating a sweet-tart profile that is perfect for toast, crackers, or as a glaze for meats. Made with liquid pectin, it sets firmly without needing long cooking times that can dull the fresh fruit taste. It’s an excellent project for late summer when grapes are at their peak. This jewel-toned preserve makes a wonderful gift or a cherished addition to your pantry for cold winter mornings.

Ingredients

Directions

  1. Remove stems from Concord grapes and place them in a large Dutch oven.
  2. Crush the grapes thoroughly with a potato masher or wooden spoon, then add the water.
  3. Bring the mixture to a boil, cover, reduce heat, and simmer for 10 minutes to extract flavor.
  4. Press the cooked mixture through a jelly bag or several layers of cheesecloth to extract 4 cups of juice.
  5. Cover the extracted juice and let it sit overnight in a cool place or refrigerator to settle.
  6. Strain the juice through a double thickness of damp cheesecloth to ensure it is clear.
  7. Combine the strained juice and sugar in a large Dutch oven, stirring well to dissolve sugar.
  8. Place over high heat and cook, stirring constantly, until the mixture comes to a rapid boil.
  9. Add the liquid pectin and bring to a full rolling boil that cannot be stirred down; boil exactly 1 minute, stirring constantly.
  10. Remove from heat and skim off any foam with a metal spoon or fork dipped in hot water.
  11. Quickly pour the hot jelly into hot, sterilized jars, leaving 1/4-inch headspace at the top.
  12. Wipe jar rims with a clean, damp cloth to ensure a proper seal.
  13. Cover immediately with metal lids and screw on bands until fingertip-tight.
  14. Process jars in a boiling-water bath for 5 minutes, then remove and let cool undisturbed for 24 hours.
