  1. Peel, core, and dice 4 of the large tomatoes.
  2. Core, seed, and quarter the 2 green bell peppers.
  3. Trim the leek and cut it into chunks.
  4. In a large saucepan, combine the diced tomatoes, green peppers, leek chunks, and lightly beaten egg whites.
  5. Pour in the rich chicken stock and mix well to combine all ingredients.
  6. Season the mixture with salt and pepper to taste.
  7. Place the saucepan over medium-low heat and slowly bring the mixture to a gentle boil, stirring occasionally to prevent sticking.
