  1. Soft 2 tsp unflavored gelatin in 1/4 cup cold water and let stand for 5 minutes to soften.
  2. In a small saucepan, combine 3/4 cup packed brown sugar and 1/2 cup water. Bring to a boil over medium-high heat, stirring until sugar dissolves.
  3. Cook the syrup without stirring until it reaches 232ðF (111ðC) (soft thread stage) on a candy thermometer, or until a drop forms a thread when pulled between fingers. This takes about 10-15 minutes.
  4. Meanwhile, in a large bowl, beat 3 egg whites with a dash of salt until stiff peaks form.
  5. Remove the caramel syrup from heat. Stir in the softened gelatin until completely dissolved.
  6. With the mixer running on low, slowly pour the hot caramel-gelatin mixture into the beaten egg whites, beating constantly to incorporate.
  7. Beat on high speed for 2-3 minutes until the mixture is thick, glossy, and holds its shape.
  8. Gently fold in 1 tsp vanilla extract using a rubber spatula until just combined.
  9. Pour the caramel whip into a 1-quart mold or 6 individual molds. Refrigerate for at least 4 hours or until set.
  10. For the custard sauce: In a saucepan, beat 3 egg yolks until pale and lemon-colored. Stir in 3 tbsp granulated sugar and a dash of salt.
  11. Gradually whisk in 1 1/2 cups milk. Cook over low heat, stirring constantly with a wooden spoon, until the mixture thickens enough to coat the back of the spoon (about 170ðF).
  12. Remove from heat and let cool slightly. Stir in 1/2 tsp vanilla extract, 1/4 tsp lemon extract, and 1/4 tsp almond extract.
  13. Cool the custard sauce completely, then cover and refrigerate until serving.
  14. To serve, unmold the caramel whip onto plates. Sprinkle generously with chopped walnuts.
  15. Spoon the chilled custard sauce alongside or over the caramel whip and serve immediately.
