Description

This comforting classic features tenderized flank steak, pounded thin and dredged in seasoned flour before being pan-fried to a golden crisp. The real magic happens in the skillet where crispy bacon and saut&# 195;©ed onions form the base for a thick, creamy milk gravy. It’s a hearty, home-style meal that delivers maximum flavor with minimal fuss. Perfect for a cozy weeknight dinner, this dish pairs wonderfully with mashed potatoes or cornbread to soak up every drop of the delicious sauce. A true Southern favorite that brings warmth and satisfaction to your table.

Ingredients

Directions

  1. Cut the flank steak into 4 equal portions crosswise.
  2. Place each steak between plastic wrap and pound with a meat mallet until about 1/4 inch thick.
  3. Season the steaks generously with salt and fresh ground pepper.
  4. In a shallow dish, mix 2 cups of flour with Essence seasoning or your favorite all-purpose seasoning.
  5. In another shallow dish, whisk together 2 eggs and 2 tablespoons of milk.
  6. Dredge each steak in the seasoned flour, coating both sides completely and shaking off excess.
  7. Heat enough vegetable oil in a large skillet to fill the bottom about 1/4 inch deep over medium-high heat.
  8. Carefully place the steaks in the hot oil and pan-fry for 3 to 4 minutes per side, or until golden brown and cooked through.
  9. Remove steaks from the skillet and keep warm. Reserve the skillet drippings.
  10. Add 6 ounces of finely chopped bacon to the skillet and cook until crispy, about 3 to 4 minutes.
  11. Add 1/4 cup of minced onions to the bacon and sauté for 2 to 3 minutes until softened.
  12. Stir in the remaining 1/2 cup of flour and cook for 2 minutes to remove the raw flour taste.
  13. Whisk in 3 cups of whole milk, bringing the mixture to a simmer while stirring constantly.
  14. Simmer the gravy for 3 to 4 minutes until thickened, adjusting consistency with extra milk if needed.
  15. Season the gravy with salt and black pepper to taste.
  16. Spoon the hot bacon gravy over each steak and serve immediately.
