Description

This elegant Crab Gratin features tender linguine tossed with fresh crabmeat and sautéed mushrooms, all bound in a luxurious sauce made from clam juice, white wine, and heavy cream. The dish is finished with a light sprinkle of breadcrumbs for a subtle crunch and a golden finish under the broiler. It offers a delicate balance of briny seafood flavors and creamy richness, making it perfect for a special weeknight dinner or a romantic meal for two. The addition of tarragon and lemon juice brightens the dish, cutting through the richness of the cream.

Ingredients

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cook linguine in a large pot of boiling salted water according to package directions until al dente.
  3. Drain pasta and rinse under cold running water to stop the cooking process; drain thoroughly.
  4. Place cooked linguine in a large mixing bowl.
  5. In a small saucepan, combine sliced mushrooms, 1 tablespoon lemon juice, and water.
  6. Cover saucepan tightly with a lid or foil and steam on high heat for about 1 minute until mushrooms are tender.
  7. Transfer mushrooms to a plate using a slotted spoon; reserve the cooking liquid (about 1/4 cup).
  8. In a medium saucepan, whisk flour with a small amount of clam juice to form a smooth paste.
  9. Stir in remaining clam juice, additional lemon juice, white wine, and reserved mushroom liquid.
  10. Season sauce with ground coriander, tarragon, black pepper, and soy sauce.
  11. Place saucepan over medium heat and bring to a simmer, stirring constantly.
  12. Cook and stir until the sauce thickens, approximately 3 to 4 minutes.
  13. Remove from heat and stir in heavy cream, chopped parsley, and chopped tomatoes.
  14. Add steamed mushrooms to the bowl with the linguine and toss to combine.
  15. Lightly oil a 6-cup gratin dish or baking dish.
  16. Pour half of the cream sauce over the pasta and mushroom mixture and toss to coat evenly.
  17. Transfer the coated pasta mixture to the prepared gratin dish and spread into an even layer.
  18. Gently fold the crabmeat into the remaining sauce.
  19. Spoon the crab mixture evenly over the pasta layer in the dish.
  20. Sprinkle plain bread crumbs evenly over the top of the crab mixture.
  21. Bake for 15 minutes or until the gratin is heated through and bubbling.
  22. If the top is not golden brown, place under the broiler for 1 minute, watching closely to prevent burning.
  23. Serve hot directly from the gratin dish.
