Ingredients

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. In a small bowl, combine the lump crabmeat, beaten egg, grated Parmigiano-Reggiano, Creole mustard, bread crumbs, and 2 teaspoons of Essence seasoning. Gently mix until just combined, being careful not to break up the crab lumps.
  3. Heat olive oil in a sauté pan over medium heat. Add the finely minced onions, celery, green bell peppers, shallots, and 2 teaspoons of garlic. Sauté for 2-3 minutes until softened but not browned.
  4. Remove the sautéed vegetable mixture from heat and let it cool slightly. Fold the cooled vegetables into the crab mixture.
  5. Butterfly the prawns by cutting along the back, leaving the tails intact. Season the inside of each prawn with a pinch of salt, pepper, and remaining Essence.
  6. Divide the crab stuffing evenly among the prawns, pressing a generous amount into the cavity of each one.
  7. Place the stuffed prawns on a parchment-lined baking sheet. Bake for 10 minutes, or until the prawns are pink and opaque.
  8. While prawns bake, prepare the tomato butter: In a small saucepan, mash the seeded and chopped plum tomatoes over high heat for 1 minute.
  9. Add the remaining garlic, shrimp stock, salt, cayenne pepper, and fresh black pepper to the tomatoes. Bring to a boil and whisk constantly for 1 minute to reduce slightly.
  10. Remove the sauce from heat. Whisk in the cubed unsalted butter a few cubes at a time until fully emulsified and smooth.
  11. Drizzle the hot tomato butter sauce over the baked prawns just before serving.
