Cranberry & Raisin Chutney
Description
This vibrant chutney is a staple of Indian cuisine, offering a complex interplay of sweet, tart, and spicy flavors. The bright acidity of fresh cranberries cuts through the richness of the sugar, while plump raisins and soft pears provide a luxurious, jammy texture. Infused with the warm aroma of ginger and the citrusy zest of orange peel, it adds depth to any meal. It pairs beautifully with grilled meats, curries, or as a sophisticated accompaniment to cheese boards. Easy to prepare with pantry staples, this versatile sauce brings a burst of homemade flavor to your table year-round.Ingredients
Directions
-
Bring 2 cups of water to a boil in a heavy large saucepan. Add the raisins, remove from heat, and let stand for 15 minutes to plump. Drain the raisins, discarding the water.
-
Peel, core, and chop the pears into small dice. Set aside.
-
In the same saucepan, combine the sugar, white wine vinegar, orange juice, orange peel, ginger, and plumped raisins.
-
Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves.
-
Reduce heat to medium-low. Add the cranberries and chopped pears to the saucepan.
-
Simmer uncovered, stirring occasionally, for about 30 to 40 minutes until the cranberries burst and the mixture thickens to a chutney consistency.
-
Remove from heat and discard the orange peel and ginger pieces if desired, or leave them in for extra flavor.
-
Transfer the chutney to jars. It can be served warm or cooled. Store in the refrigerator for up to 3 weeks.
