  1. Preheat oven to 400&# 194;°F (200ðC).
  2. Wash and thoroughly dry the chickens, then sprinkle generously with salt and pepper. Set aside.
  3. In a small bowl, combine 1/2 cup dark brown sugar, 2 tablespoons dark rum, 1 tablespoon lime juice, 2 teaspoons lemon pepper, 1 teaspoon ginger, 1/2 teaspoon ground cloves, 1/4 teaspoon cinnamon, 1/4 teaspoon garlic powder, and 2 dashes hot pepper sauce to create the Caribbean paste.
  4. Place the chickens skin-side up in a large shallow baking pan.
  5. Rub the Caribbean paste evenly over the entire surface of the chickens, ensuring you get under the wing tips and around the legs.
  6. Bake in the preheated oven for 45 minutes, or until the chicken is fork-tender and cooked through.
  7. While the chicken bakes, place 10 oz mango chutney and the remaining 2 tablespoons of dark rum into a blender.

  9. Remove chickens from the oven and spoon the warm chutney-rum mixture evenly over the top of each chicken.
  10. Return to the oven for 3 more minutes, just until the glaze is heated through and bubbly.
  11. Transfer the chickens to a serving platter.
