Ingredients

Directions

  1. In a 4-quart saucepan, sprinkle unflavored gelatin over 2 cups of cold water; let stand for 1 minute to soften.
  2. Cook over medium heat, stirring frequently, until the gelatin is completely dissolved.
  3. Remove the saucepan from heat and stir in cherry and lemon/lime flavored gelatin until dissolved.
  4. Stir in 3 cups of cold water.
  5. Refrigerate the gelatin mixture until it mounds slightly when dropped from a spoon, about 1 hour.
  6. Meanwhile, coarsely chop fresh cranberries and mince celery stalks; place in a medium bowl.
  7. Add drained pineapple chunks and sugar to the fruit and celery mixture, stirring until the sugar dissolves.
  8. Fold the fruit mixture into the thickened gelatin base until well combined.
  9. Pour the mixture into a greased 10-inch Bundt pan or 12-cup mold.
  10. Cover and refrigerate until set, at least 3 hours.
  11. To serve, run a knife around the edge and carefully unmold onto a chilled platter.
