Description

These creamy caramels are the epitome of homemade confectionery bliss. By carefully cooking a mixture of heavy cream, milk, sugar, and corn syrup to the soft-ball stage, you achieve a texture that is delightfully chewy yet melts in your mouth. The addition of chopped nuts provides a satisfying crunch that contrasts beautifully with the smooth, buttery caramel base. Perfect for gift-giving during the holidays or as an elegant dessert accompaniment, these candies require patience but reward you with old-fashioned flavor. They are far superior to store-bought versions and make a wonderful addition to any cookie platter or holiday box.

Ingredients

Directions

  1. In a small bowl, whisk together the heavy cream and milk until fully combined; set aside.
  2. In a heavy-bottomed 4-quart saucepan, combine 1 1/2 cups of the cream mixture, sugar, and corn syrup.
  3. Place the saucepan over medium heat and stir constantly with a wooden spoon until the mixture comes to a full boil.
  4. Continue cooking, stirring constantly to prevent scorching, until the mixture reaches 234&# 194;°F (112ðC) (soft-ball stage) on a candy thermometer.
  5. Test the consistency by dropping a small amount into very cold water; it should form a soft ball that flattens when removed.
  6. Slowly pour in the remaining cream mixture while stirring gently to avoid splattering.
  7. Continue cooking over medium heat, stirring occasionally, until the temperature reaches 244ðF (118ðC) (firm-ball stage).
  8. Remove the pan from the heat immediately to prevent overcooking.
  9. Stir in the vanilla extract and chopped nuts until evenly distributed throughout the caramel.
  10. Pour the hot caramel mixture into a buttered 9x9-inch pan, spreading it evenly with a spatula.
  11. Allow the caramel to cool completely at room temperature, which may take several hours.
  12. Once set, turn the caramel out onto a cutting board and cut into squares.
