Creamy Carmelized Garlic Dip recipe image

This Creamy Carmelized Garlic Dip is a sophisticated twist on classic French appetizers, perfect for entertaining or a cozy evening in. By roasting whole heads of garlic until they are soft and sweet, you unlock a mellow, nutty flavor that replaces the sharp bite of raw cloves. The roasted pulp is blended with tangy yogurt, zesty cider vinegar, and fresh tarragon to create a luxurious, smooth spread. It’s incredibly versatile: serve it with crusty French baguette slices for a rustic touch, or use it as a creamy base for crunchy vegetable dippers like carrots and celery. The combination of creamy texture and aromatic herbs makes this dip a standout addition to any charcuterie board or party platter.

Ingredients

Directions

  1. Preheat your oven to 400ðF (200ðC).
  2. Tear off an 8x10 inch piece of aluminum foil and coat it lightly with 1 teaspoon of canola oil.
  3. Place the two halved heads of garlic, cut-side down, side by side on the center of the foil.
  4. Bring the edges of the foil up and around the garlic, twisting the ends to create a sealed packet.
  5. Place the foil packet on a baking sheet and bake for 40 minutes, or until the garlic cloves are very soft and golden.
  6. Remove from the oven and let cool for 10 minutes before opening the foil.
  7. Squeeze the softened garlic pulp from the skins into the bowl of a food processor.
  8. Add the cider vinegar, chopped fresh tarragon leaves, and freshly ground black pepper to the processor.
  9. Process for 4-5 seconds, scraping down the sides of the bowl once, to combine the aromatics.
  10. Add the plain nonfat yogurt and process for 30 seconds until smooth.
  11. With the processor running, slowly drizzle in the remaining 2 1/2 tablespoons of canola oil until the dip is fully emulsified and creamy.
  12. Transfer the dip to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld.
  13. Serve chilled with sliced French baguette rounds or an assortment of vegetable dippers.
  14. Store any leftovers tightly covered in the refrigerator for up to one week.
