Description

These delicate French crepes are the perfect canvas for a variety of fillings, but shine brightest with this light, creamy sweet cheese mixture. The batter is simple to blend and benefits from a brief rest to ensure a tender, non-greasy texture. The filling combines low-fat cottage cheese, Neufchatel, and a hint of vanilla for a rich yet healthy flavor profile. Ideal for a leisurely weekend brunch or a quick, satisfying breakfast, these crepes offer a comforting, home-style taste. They are easy to stack and store, making them a versatile addition to your morning routine. Serve with fresh berries or a drizzle of fruit compote for a complete meal.

Ingredients

Directions

  1. In a blender, combine the cold water, cold nonfat milk, 1 whole egg, 4 egg whites, and 1/2 teaspoon salt.
  2. Add the sifted all-purpose flour and vegetable oil to the blender.
  3. Blend at high speed until smooth, stopping occasionally to scrape down the sides to ensure all flour is incorporated.
  4. Cover the batter and refrigerate for 2 hours to allow the flour particles to hydrate and ensure tender crepes.
  5. Meanwhile, prepare the sweet cheese filling by blending 3/4 cup low-fat cottage cheese, 2 oz Neufchatel cheese, and 2 teaspoons vanilla until smooth.
  6. Heat a 6-inch nonstick frying pan over moderately high heat.
  7. Pour a scant 1/4 cup of batter into the hot pan and immediately rotate the pan to coat the bottom evenly.
  8. Cook until the edges begin to lift and the bottom is light brown, then flip and cook the other side briefly.
  9. Slide the crepe onto a plate and repeat with the remaining batter, placing waxed paper between each crepe as you stack them.
  10. Keep the stack covered to prevent drying.
  11. Spoon the sweet cheese filling onto the center of each crepe and fold or roll as desired.
  12. Serve immediately, garnished with fresh fruit or berries if desired.
