  1. Preheat oven to 350°F (175°C). Roll out 8 oz of the wholewheat pastry and line an 8-inch flan dish or tart pan.
  2. Line the pastry case with parchment paper and fill with baking beans or rice. Blind bake for 15-20 minutes until the edges are set and lightly golden.
  3. Meanwhile, place the pigeon, chicken breasts, stock, white wine, black pepper, and cloves in a large pot.
  4. Bring to a simmer and cook very slowly for 1 hour.
  5. Add the chicken breasts to the pot if not already added, and continue to cook for another 45 minutes, or until the meat of both birds is tender enough to fall off the bone.
  6. While the birds cook, melt butter in a small skillet over medium heat. Sauté the chopped mushrooms until lightly browned and tender.
  7. Remove the pigeon and chicken from the stock. Let them cool slightly, then remove all bones and skin.
  8. Cut or tear the meat into small, bite-sized pieces.
