Currant Syrup recipe image

This vibrant fruit syrup captures the essence of summer in a bottle. By combining sweet white or red currants with the bright acidity of raspberries and sour cherries, you create a complex, layered flavor profile that is both refreshing and deeply satisfying. The texture is smooth and glossy, making it an ideal mixer for sparkling water, lemonade, or as a drizzle over ice cream and yogurt. It’s a versatile staple for your pantry, perfect for entertaining guests or enjoying a homemade treat on a warm afternoon. The natural sugars from the fruit balance the added sugar, resulting in a syrup that isn’t overly cloying but beautifully aromatic.

Ingredients

Directions

  1. Wash all fruits thoroughly. Pit the sour cherries if necessary.
  2. Combine the currants, raspberries, and cherries in a large bowl.
  3. Mash the fruits together using a potato masher or fork until broken down.
  4. Cover the bowl and let the mixture stand in a warm place for 24 hours to macerate.
  5. Strain the fruit mixture through a fine-mesh sieve or cheesecloth into a nonreactive saucepan, pressing to extract all juice.
  6. Measure the liquid. For every 2 1/2 cups of fruit juice, add 4 cups of granulated sugar.
  7. Place the saucepan over low heat, stirring constantly until the sugar is completely dissolved.
  8. Bring to a gentle simmer and cook for 5-10 minutes, stirring occasionally, but do not boil vigorously.
  9. Remove from heat and let the syrup cool completely.
  10. Skim off any foam or impurities from the surface.
  11. Pour the cooled syrup into sterilized bottles and seal tightly.
  12. Store in the refrigerator. Use within two weeks of opening.
