Description

These Deep Dark Chocolate Fudge Cookies are the ultimate treat for serious chocolate lovers. By melting both semi-sweet and unsweetened chocolate directly into the dough, these cookies achieve an unparalleled depth of flavor that cocoa powder alone cannot provide. The texture is delightfully complex: crisp edges give way to a dense, fudgy center that rivals the best chocolate brownies. They are incredibly moist and satisfying, making them perfect for holiday baking, potlucks, or simply satisfying a late-night sweet tooth. While they are decadent, the balanced sweetness from brown sugar and the richness of butter ensure they are never cloying. Store them in an airtight container to soften the edges for an even more chewy experience.

Ingredients

Directions

  1. Preheat the oven to 325 degrees Fahrenheit (163C).
  2. Sift together the flour, cocoa powder, baking soda, and salt onto a sheet of waxed paper or into a small bowl. Set aside.
  3. Heat about 1 inch of water in the bottom half of a double boiler over medium heat.
  4. Place the semi-sweet and unsweetened chocolate chunks in the top half of the double boiler.
  5. Cover the top tightly with plastic wrap to prevent condensation from dripping into the chocolate. Let it heat for 12 to 15 minutes until mostly melted.
  6. Remove from heat and stir until the chocolate is completely smooth. Allow it to cool slightly to room temperature.
  7. In the bowl of an electric mixer fitted with a paddle attachment, combine the brown sugar and butter.
  8. Beat on medium speed for 1 minute, then scrape down the sides of the bowl. Beat on high for an additional 30 seconds until creamy.
  9. Add the eggs one at a time, beating on medium speed until each egg is fully incorporated before adding the next. Scrape down the bowl as needed.
  10. Add the vanilla extract and beat for 30 seconds.
  11. Add the melted chocolate mixture and beat on low speed for 10 seconds. Scrape down the bowl and beat for another 30 seconds until well combined.
  12. Add the sifted dry ingredients to the chocolate mixture. Beat on low speed for 20-30 seconds until just combined.
  13. Remove the bowl from the mixer and use a sturdy rubber spatula to fold the batter thoroughly, ensuring no dry pockets remain.
  14. Line two baking sheets with parchment paper or silicone mats.
  15. Drop 2 level tablespoons of batter onto the baking sheets, spacing them about 2 inches apart. Place 6 to 8 cookies per sheet.
  16. Bake in the preheated oven for 18 to 22 minutes, rotating the sheets from top to bottom halfway through baking to ensure even browning.
  17. Remove from the oven and let the cookies cool on the baking sheets for 5 to 6 minutes.
  18. Transfer the cookies to a wire rack to cool completely.
  19. Repeat with the remaining batter. Store cooled cookies in an airtight container to soften the edges for a chewier texture.
