Ingredients

Directions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Place the pie crust on a cookie sheet and allow it to thaw if frozen.
  3. Once thawed, use your hands to press the dough flat and shape it into a 12-inch circle on the cookie sheet.
  4. Flute the edges of the crust and pierce the surface gently all over with a fork.
  5. Bake in the preheated oven for 10-12 minutes, or until the crust is lightly browned.
  6. Remove from oven and let the crust cool completely.
  7. While the crust cools, place cream cheese in a large bowl and beat with a mixer on high speed until smooth.
  8. Add grated orange peel to the cream cheese and beat until well combined.
  9. With the mixer still running, slowly pour in the light corn syrup and continue beating until the mixture is light and fluffy.
  10. In a separate small bowl, beat the milk and vanilla pudding mix at low speed for 2 minutes until thickened.
  11. Fold the pudding mixture into the cream cheese mixture until fully incorporated.
  12. Spoon the creamy filling evenly onto the cooled pie crust.
  13. Sprinkle the toasted coconut evenly over the filling.
  14. Peel the orange, removing all white pith and seeds, and slice it thinly.
  15. Arrange the orange slices and kiwi slices decoratively on top of the coconut.
  16. Halve the grapes and press them, cut side down, into the filling in a decorative pattern.
  17. Place halved or whole strawberries around the edge or in a pattern on the pizza.
  18. Lightly sift powdered sugar over the entire dessert.
  19. Cover loosely with plastic wrap and refrigerate until ready to serve.
