Ingredients

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Scrub the potatoes under cold water and place them wet on a baking sheet.
  3. Bake the potatoes for about 1 hour, or until tender when pierced with a fork.
  4. Remove potatoes from the oven and let them cool until they can be handled.
  5. Cut each potato in half lengthwise and carefully scoop out the pulp, leaving a thin shell to create "boats".
  6. Mash the scooped potato pulp in a large bowl.
  7. Mix the diced cooked ham, sharp cheddar cheese, provolone cheese, diced green pepper, and chopped onion into the mashed potatoes.
  8. Add a spoonful or two of sour cream or yogurt to the mixture and stir until well combined.
  9. Place a small pat of butter in the bottom of each potato shell.
  10. Spoon the potato mixture back into the shells, creating a small well in the center of each one.
  11. Fill the wells with the remaining diced cheese and top each with a small pat of butter.
  12. Cover and chill the stuffed potatoes overnight if desired, or proceed immediately.
  13. Preheat the oven to 375 degrees F (190 degrees C).
  14. Bake the dirigibles until heated through and the cheese is melted and bubbly, about 20-25 minutes.
  15. Top each dirigible with a dollop of sour cream, crumbled cooked bacon, and chopped chives before serving.
