Description

This sophisticated appetizer combines the rich, earthy depth of duck liver with the bright, crisp acidity of a spicy cucumber salad. The duck livers are gently cooked with red onion, capers, and anchovies before being blended into a rustic, textured spread. Served on toasted Italian country bread, the creamy liver mixture contrasts beautifully with the cool, peppery cucumber slices dressed in red wine vinegar. It is a perfect balance of savory umami and fresh crunch, ideal for wine nights, holiday gatherings, or as a luxurious starter that feels effortless yet refined.

Ingredients

Directions

  1. In a 10-inch to 12-inch sauté pan, heat 2 tablespoons of olive oil slowly over medium heat.
  2. Add the thinly sliced red onion and cook slowly until soft but not browned, about 10 minutes.
  3. Add the duck livers, rinsed capers, rinsed anchovy fillets, and crushed red pepper flakes to the pan.
  4. Cook the mixture until the livers are lightly browned, stirring occasionally, for about 10 minutes.
  5. Pour in the dry red wine and simmer until only 3 to 4 tablespoons of liquid remain.
  6. Transfer the liver mixture to a food processor and blend intermittently until it forms a lumpy, rustic puree.
  7. Season the liver mixture with salt and pepper to taste, then transfer it to a small mixing bowl.
  8. Peel the English cucumber and remove the seeds, then slice into 1/8-inch half moons.
  9. In a separate bowl, toss the cucumber slices with the remaining olive oil, red wine vinegar, sugar, salt, and pepper.
  10. Grill or toast the slices of Italian country bread on both sides until golden and crisp.
  11. Spread 1 tablespoon of the duck liver mixture over each toasted bread slice.
  12. Divide the crostini among 4 plates and top each with 2 tablespoons of the spicy cucumber mixture.
  13. Serve immediately while the bread is still warm and crisp.
