Ingredients

Directions

  1. Preheat oven to 325°F (165°C). Prepare a water bath by placing a roasting pan filled with hot water in the oven.
  2. Place cleaned duck livers, chopped shallots, kosher salt, fresh ground pepper, nutmeg, brandy, and hazelnut liqueur into the bowl of a food processor.
  3. Pulse the mixture until the ingredients are finely chopped and combined, then process continuously to create a coarse paste.
  4. With the food processor running, slowly drizzle in the heavy cream through the feed tube until the mixture becomes a smooth, homogeneous purée.
  5. Pass the purée through a fine-mesh sieve into a bowl to ensure an ultra-smooth texture, pressing gently with a spatula.
  6. Transfer the strained mixture into a terrine dish or a loaf pan lined with parchment paper. Smooth the top.
  7. Place the terrine into the water bath in the preheated oven. Bake for 45 to 50 minutes, or until the center is just firm to the touch but still slightly jiggly.
  8. Remove from the oven and let cool completely at room temperature. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to set.
  9. Unmold the moose onto a serving plate. Slice thinly and serve with toasted French bread slices, cornichons, or pickled onions.
