Ingredients

Directions

  1. Toss the shrimp with 1 teaspoon of salt and let stand for 10 minutes, then rinse thoroughly, drain, and pat dry.
  2. Finely chop the shrimp and place them in a mixing bowl.
  3. Add the remaining salt, minced ginger, dry sherry, cornstarch, chopped water chestnuts, green onions, coriander, chopped Chinese sausage, and grated Monterey Jack cheese to the shrimp.
  4. Mix the filling ingredients thoroughly until well combined.
  5. If using wonton wrappers, trim the corners to create a circular shape.
  6. Place 1 heaping teaspoon of the filling in the center of one wrapper.
  7. Moisten the edges of the wrapper with water, fold in half to enclose the filling, and pinch the edges tightly to seal.
  8. Place the sealed gyoza on a baking sheet and cover with a towel to prevent drying out. Repeat with remaining filling and wrappers.
  9. Heat 1 tablespoon of oil in a 10-inch nonstick skillet over medium heat.
  10. Arrange 12 gyozas in a single layer in the skillet and pan-fry for 1 minute until lightly browned on the bottom.
  11. Flip the gyozas and cook for another minute to brown the other side.
  12. Add the chicken stock to the skillet, shake gently to prevent sticking, cover, and simmer on low heat for 2 minutes.
  13. Remove the cooked gyozas to a plate and keep warm.
  14. Increase the heat under the skillet to high, add the heavy cream, and stir for 45 seconds until the sauce thickens.
  15. Stir in the lime juice and season with salt and white pepper to taste.
  16. Spoon the lime cream sauce onto 4 plates, arrange 3 gyozas on each plate, and garnish with fresh coriander sprigs.
