Description

These East-meets-West gyozas offer a delightful fusion of textures and flavors. The filling combines sweet, plump shrimp with salty Chinese sausage and creamy Monterey Jack cheese, all bound together with aromatic ginger and fresh herbs. The result is a dumpling that is crispy on the outside thanks to pan-frying, yet tender and juicy within. Finished with a rich, tangy lime cream sauce, these dumplings make for an impressive yet manageable weeknight dinner or a unique appetizer for gatherings. They are surprisingly easy to assemble and cook quickly, making them a perfect choice when you crave something gourmet without spending hours in the kitchen.

Ingredients

Directions

  1. Toss the shrimp with 1 teaspoon of salt and let stand for 10 minutes to draw out moisture.
  2. Rinse the shrimp thoroughly, drain, and pat completely dry with paper towels.
  3. Finely chop the shrimp and place them in a large mixing bowl.
  4. Add the remaining salt, minced ginger, dry sherry, cornstarch, chopped water chestnuts, green onions, coriander, finely chopped Chinese sausage, and grated Monterey Jack cheese to the bowl.
  5. Mix the ingredients thoroughly until well combined.
  6. If using square wonton wrappers, trim the corners to create a circle shape.
  7. Place 1 heaping teaspoon of filling in the center of one wrapper.
  8. Moisten the edge of the wrapper with water using your finger.
  9. Fold the wrapper in half over the filling to form a half-moon shape.
  10. Pinch the edges together firmly to seal the dumpling.
  11. Place the sealed gyoza on a baking sheet and cover with a damp towel to prevent drying out. Repeat with remaining filling and wrappers.
  12. Heat 1 tablespoon of oil in a 10-inch nonstick skillet over medium heat.
  13. Arrange 12 gyozas in a single layer in the skillet.
  14. Pan-fry for 1 minute until the bottoms are lightly browned.
  15. Flip the gyozas and cook for another minute to brown the other side.
  16. Add chicken stock to the pan, shaking gently to prevent sticking.
  17. Cover the skillet and cook at a low boil for 2 minutes to steam the filling.
  18. Remove the cooked gyozas to a plate and keep warm. Repeat cooking process for remaining gyozas.
  19. For the sauce, increase heat under the skillet to high and add heavy cream.
  20. Bring the cream to a boil, stirring constantly for 45 seconds until thickened.
  21. Stir in lime juice and season with salt and white pepper to taste.
  22. To serve, divide the sauce among 4 plates.
  23. Arrange 3 gyozas on each plate.
  24. Garnish with sprigs of fresh coriander and serve immediately.
