  1. Soak the white beans in cold water overnight, changing the water and rinsing them frequently.
  2. In a large heavy saucepan, combine the soaked beans, bacon, ham, chopped onion, garlic, bouquet garni, and peeled tomatoes.
  3. Add enough chicken stock or water to just cover the beans and bring to a boil over moderately high heat.
  4. Reduce the heat and simmer gently until the beans are soft but not mushy, about 45 to 60 minutes.
  5. Meanwhile, brown the confit duck as directed on the package or until crisp and golden.
  6. Cook and brown the sausages in a separate pan until fully cooked.
  7. Saute the cubed lamb in a small amount of oil or butter until browned on all sides.
  8. Drain all the prepared meats on paper towels to remove excess fat.
  9. Preheat the oven to 425 degrees Fahrenheit (218ðC).
  10. In a large oven-proof casserole dish, arrange the pieces of confit duck snugly on the bottom.
  11. Spoon a layer of the cooked beans over the duck.
  12. Add a layer of the browned lamb cubes, followed by another layer of beans.
  13. Place the sausages on top and cover with the remaining beans.
  14. Combine the dry bread crumbs and finely chopped fresh parsley in a small bowl.
  15. Sprinkle the breadcrumb mixture evenly over the top of the casserole.
  16. Dribble the melted sweet butter over the crumbs and place the dish in the middle of the preheated oven.
