Ingredients

Directions

  1. Prepare the eggwash by whisking together 1 egg, 1/2 cup water, and 1/2 cup milk until smooth.
  2. Place unseasoned flour in a shallow dish for dredging.
  3. Dip each catfish fillet into the eggwash, ensuring it is fully coated.
  4. Dredge the wet fillets in the flour, coating evenly on all sides and shaking off excess.
  5. Heat 3/4 cup vegetable oil in a 10-inch heavy-bottomed sauté pan over medium-high heat.
  6. Carefully add three catfish fillets to the hot oil and sauté until golden brown, approximately 3 to 5 minutes per side.
  7. Remove the cooked fillets from the pan and keep them warm on a plate.
  8. Repeat the frying process with the remaining three fillets, then remove and keep warm.
  9. In the same pan, add julienned andouille sausage, minced garlic, sliced mushrooms, and chopped green onions.
  10. Sauté the sausage and vegetables until the mushrooms are tender and vegetables are wilted, about 3 to 5 minutes.
  11. Add 24 fresh shucked oysters to the pan and sauté briefly until their edges become curly.
  12. Deglaze the pan with 1/2 cup dry white wine, scraping up any browned bits from the bottom.
  13. Pour in 1 1/2 cups heavy whipping cream and bring to a gentle simmer, cooking until the sauce thickens slightly.
  14. Season the sauce with salt and white pepper to taste.
  15. Remove the pan from heat and swirl in 4 slices of cold butter, two at a time, until fully incorporated and glossy.
  16. To serve, place a pool of the oyster butter sauce in the center of a warm plate.
  17. Top the sauce with a fried catfish fillet and garnish with four cooked oysters per serving.
