Eggplant Sichuan Style
Description
This Sichuan-style eggplant dish is a vibrant celebration of bold flavors and textures. The eggplant, whether using slender Chinese varieties or robust Italian types, is salted and fried to achieve a perfect balance of crisp exterior and melt-in-your-mouth interior. The sauce is a harmonious blend of savory soy, sweet sugar, tangy vinegar, and aromatic sesame oil, infused with fresh ginger, garlic, and a hint of heat from dried chile flakes. Crunchy water chestnuts add a delightful textural contrast, while fresh green onions provide a bright, fresh finish. Ideal as a side dish for rice or noodles, this recipe captures the essence of home-style Chinese cooking. It is naturally vegan and packed with umami, making it a comforting yet exciting addition to any weeknight dinner or family gathering.Ingredients
Directions
-
Cut the eggplant into 1/2-by-2-inch strips. If using Italian eggplants, peel the skin first.
-
In a colander, toss the eggplant strips with salt. Let them drain for 30 minutes to remove excess moisture and bitterness.
-
Squeeze the eggplant gently to remove excess water, then pat dry thoroughly with paper towels.
-
In a small bowl, mix together 1 tablespoon soy sauce, 1 tablespoon sugar, and 1/4 cup chicken stock (or vegetable broth for vegan option).
-
Preheat a wok or large skillet over high heat until smoking hot. Add 3 tablespoons of oil and tilt the wok to coat the sides.
-
Add one layer of eggplant strips to the hot wok. Stir-fry until seared and tender, about 3 minutes.
-
Remove the cooked eggplant to a colander placed over a bowl to catch any drippings. Repeat with remaining eggplant, adding more oil if necessary.
-
Reheat the wok over medium-high heat. Add the remaining 1 tablespoon of oil, followed by 2 teaspoons grated ginger, 1 tablespoon minced garlic, and 1/4 teaspoon dried red chile flakes. Cook gently for 10 seconds until fragrant, being careful not to brown the garlic.
-
Add 1/4 cup chopped water chestnuts and half of the chopped green onions. Stir-fry for 5 seconds.
-
Increase heat to high. Pour in the reserved soy sauce mixture and the eggplant juices collected in the bowl. Bring to a boil.
-
Return the cooked eggplant to the wok. Toss quickly over high heat until most of the sauce is reduced and absorbed into the eggplant, about 1-2 minutes.
-
Remove from heat. Fold in 1 tablespoon red wine vinegar and 1 tablespoon sesame oil.
-
Transfer to a serving dish. Top with remaining chopped green onions and 1 tablespoon toasted black sesame seeds.
-
Serve hot or at room temperature.
