Ingredients

Directions

  1. Prepare the marinara sauce: Heat olive oil in a frying pan over medium heat.
  2. Add 3 cloves of garlic, cut in half, and brown lightly. Remove and discard the garlic cloves.
  3. Crush whole Italian pear tomatoes by hand and add them to the pan.
  4. Season with oregano, basil, red pepper, salt, and pepper to taste.
  5. Simmer the sauce for 15-20 minutes until thickened. Set aside.
  6. Prepare the eggplant: Peel the eggplant and slice it into 1/8-inch thick slices.
  7. Prepare an egg wash with eggs, garlic powder, parsley, salt, and pepper. Have flour ready in a separate dish.
  8. Dip each eggplant slice into the egg wash, then coat lightly in flour.
  9. Fry the coated eggplant slices in oil until golden brown on both sides. Drain on paper towels.
  10. Assemble the rolls: Place a slice of mozzarella and a spoonful of ricotta cheese on each fried eggplant slice.
  11. Roll up the eggplant slices tightly like crepes.
  12. Spread a layer of marinara sauce in the bottom of a baking dish.
  13. Place the eggplant rolls seam-side down in the dish, covering them with more marinara sauce.
  14. Top with the remaining grated mozzarella cheese.
  15. Bake at 350ðF (175ðC) for 10-15 minutes, or until the cheese is melted and bubbly.
