Ingredients

Directions

  1. Preheat oven to 350°F (175°C). Butter two 9-inch round cake pans and line bottoms with parchment paper if desired.
  2. Remove stems from the stewed figs and place them in a mixing bowl.
  3. Beat the figs vigorously with a mixer or whisk until they are broken down into small, pulpy bits.
  4. Add the dry spice cake mix (unsweetened) to the bowl with the figs.
  5. Pour in 1/2 cup of the juice from the stewed figs, plus an additional 2 tablespoons of fig juice.
  6. Beat the mixture on medium speed for 2 minutes until well combined and smooth.
  7. Add the eggs and beat for 1 minute until incorporated.
  8. Add 2 tablespoons of water and beat on low speed for 1 more minute.
  9. Divide the batter evenly between the two prepared 9-inch layer pans.
  10. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  11. Cool the cakes in the pans for 10 minutes, then remove to wire racks to cool completely.
  12. Prepare your favorite seven-minute frosting (vanilla flavored).
  13. Place one cake layer on a serving plate. Spread a generous layer of frosting on top.
  14. Sprinkle moist coconut over the frosting layer.
  15. Top with the second cake layer. Cover the top and sides with remaining frosting.
  16. Sprinkle additional coconut over the top and sides of the cake.
  17. Refrigerate for at least 30 minutes to set the frosting before slicing and serving.
