Description

These classic English crumpets offer a delightful contrast of textures with a crisp exterior and a soft, spongy interior filled with thousands of tiny holes. Made with strong white flour, milk, and a touch of dried yeast, they rise beautifully before being pan-fried to golden perfection. The addition of bicarbonate of soda just before cooking ensures that signature airy structure. They are incredibly versatile, serving as an ideal base for breakfast toppings, afternoon tea sandwiches, or a light dinner accompaniment. Whether served fresh and warm or toasted later, these homemade crumpets bring a comforting, traditional British charm to your table. Simple to prepare with pantry staples, this recipe yields a batch that pairs wonderfully with butter, jam, or savory spreads.

Ingredients

Directions

  1. Sift the strong white flour and salt into a large mixing bowl.
  2. Gently warm the milk until it is hand-hot (not boiling), then sprinkle the dried yeast and sugar over the milk.
  3. Allow the yeast mixture to stand for 10 to 15 minutes until it becomes frothy and active.
  4. Pour the yeast mixture into the flour and beat vigorously until you achieve a smooth, lump-free batter.
  5. Cover the bowl with a damp cloth and let it rise in a warm place for 45 minutes, or until the batter has doubled in size.
  6. Dissolve the bicarbonate of soda in 15ml of warm water.
  7. Beat the bicarbonate solution into the risen batter gently to maintain air bubbles.
  8. Cover again and let the batter stand for a further 20 minutes.
  9. Heat a frying pan over medium heat and grease it lightly with butter or oil.
  10. Place a 3-inch metal ring (or crumpet ring) into the hot pan.
  11. Pour about a tablespoon of batter into the ring, enough to cover the base thinly.
  12. Cook until the top is set and the bubbles have burst and dried out.
  13. Carefully remove the ring, then flip the crumpet over with a spatula.
  14. Cook the other side for 2 to 3 minutes until lightly golden brown.
  15. Transfer the cooked crumpet to a wire rack to cool.
  16. Repeat the process with the remaining batter, cleaning the ring and pan as needed.
  17. Serve immediately spread with butter, or store and toast later.
