This Everyday Garlic Chicken is a comforting, aromatic centerpiece that brings bold, home-style flavors to your dinner table. Featuring a whole roasted chicken, it is generously seasoned with 24 cloves of garlic, ground ginger, and a fresh lemon pricked to release its citrus oils. The savory chicken broth creates a rich, defatted pan sauce that perfectly complements the tender meat. This dish offers a satisfying balance of savory and bright notes, making it ideal for family gatherings or cozy weeknight meals. It is naturally low in carbs and fat, fitting well into diabetic-friendly and low-fat diets while still delivering hearty, protein-packed satisfaction.

Ingredients

Directions

  1. Preheat the oven to 350&# 194;°F (175ðC).
  2. Rinse the whole chicken inside and out, then pat it thoroughly dry with paper towels.
  3. Prick the lemon all over with a fork and place it inside the chicken cavity.
  4. Place the chicken in a small roasting pan.
  5. Cut one garlic clove in half and rub the cut sides over the breast skin.
  6. Roast the chicken for 20 minutes.
  7. Remove the pan from the oven and pour in 1 1/2 cups of the chicken broth.
  8. Return to the oven and roast for another 20 minutes.
  9. Increase the oven temperature to 375ðF (190ðC).
  10. Add the remaining 1 1/2 cups of broth and the remaining 23 garlic cloves to the pan.
  11. Roast for 30 to 40 minutes more, basting with the pan juices every 10 minutes, until the chicken is cooked through.
  12. Transfer the chicken to a platter, breast side down, and let it rest for 10 to 15 minutes.
  13. Pour the pan juices into a fat-skimming cup or measuring cup to separate the fat.
  14. Discard the fat and return the defatted juices to the roasting pan.
  15. Using a fork, mash the roasted garlic cloves directly into the juices.
  16. Place the roasting pan over medium-high heat on the stovetop.
  17. Reduce the sauce by half, stirring frequently, until thickened.
  18. Strain the sauce if a smoother consistency is desired.
  19. Carve the chicken and serve with the garlic sauce on the side.
