A hint of ground ginger adds a subtle warmth that complements the savory chicken broth reduction. Ingredients

Directions

  1. Preheat the oven to 350ðF (175ðC).
  2. Rinse the whole chicken under cold water and pat it completely dry inside and out with paper towels.
  3. Place the pricked lemon inside the chicken cavity.
  4. Position the chicken breast-side up in a small roasting pan.
  5. Cut one clove of garlic in half and rub the cut side all over the chicken skin, especially the breast.
  6. Sprinkle the ground ginger and freshly ground pepper over the chicken.
  7. Roast the chicken for 20 minutes.
  8. Remove the pan from the oven and pour 1 1/2 cups of chicken broth into the pan around the chicken (not over it).
  9. Return to the oven and continue roasting for another 20 minutes.
  10. Increase the oven temperature to 375ðF (190ðC).
  11. Add the remaining 1 1/2 cups of broth and scatter the remaining 23 garlic cloves around the chicken in the pan.
  12. Roast for another 30 to 40 minutes, basting the chicken with the pan juices every 10 minutes, until the internal temperature reaches 165ðF.
  13. Transfer the chicken to a carving platter, breast-side down, and let it rest for 10 to 15 minutes.
  14. Pour the pan juices and garlic cloves into a fat-skimming cup or a bowl to separate the fat.
  15. Discard the solid fat and return the defatted juices and garlic to the roasting pan.
  16. Place the roasting pan over medium-high heat on the stovetop.
  17. Use a fork to mash the roasted garlic cloves directly in the pan while stirring the juices.
  18. Simmer the mixture, stirring frequently, until the sauce reduces by half and thickens slightly.
  19. Strain the sauce if you prefer a smoother consistency, or leave it chunky for texture.
  20. Carve the chicken and serve with the warm garlic sauce on the side.
