  1. Rinse the black beans thoroughly and soak them in cold water overnight, or for at least 8 hours.
  2. Drain and rinse the soaked beans, then place them in a large heavy-bottomed pot.
  3. Add the chopped onion, minced garlic, bay leaf, and 3 1/2 cups of water to the pot.
  4. Bring the mixture to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 1 hour.
  5. Stir in the coriander seeds, chopped celery, chopped tomato, and half of the sliced orange.
  6. Continue simmering uncovered for another 1 to 2 hours, or until the beans are tender and the stew has thickened, adding more water if necessary.

  8. Serve the feijão preto hot over cooked rice, garnished with the remaining fresh orange slices and a sprinkle of toasted breadcrumbs if desired.
