Fiesta Bean Bake recipe image

This Fiesta Bean Bake is a comforting, crowd-pleasing dish that combines savory spiced beans with a fluffy cornbread batter. The base layer of creamy cornbread and melted cheese creates a rich foundation for the zesty bean mixture, which is simmered with onions, garlic, and tomatoes for deep flavor. Topped with more cheese and baked until golden, this casserole offers a perfect balance of textures: crunchy edges, soft interior, and tender beans. It’s an excellent choice for weeknight meals, potlucks, or meal prep. While traditionally made with cheese, you can easily adapt it for vegetarians or vegans by using dairy-free alternatives. Serve warm with a side salad or crusty bread for a complete meal.

Ingredients

Directions

  1. Preheat the oven to 350ðF (175ðC).
  2. Drain the cooked beans well and set aside.
  3. In a large skillet or kettle, heat 2 tablespoons of vegetable oil over medium heat.
  4. Add chopped onion and minced garlic to the skillet and sauté until soft and translucent, about 5 minutes.
  5. Stir in flour to the onion mixture and cook for 1 minute to remove the raw flour taste.
  6. Add diced tomatoes, chilies, and the drained beans to the skillet, breaking up the tomatoes with a spoon.
  7. Cook and stir the mixture until it comes to a boil, then remove from heat and set aside.
  8. In a separate bowl, combine the remaining 1/4 cup vegetable oil, milk, cornmeal, corn, eggs (if using non-vegan), and seasonings to make the cornbread batter.
  9. Grease a 2-quart casserole dish.
  10. Pour two-thirds of the cornbread batter into the bottom of the prepared casserole dish.
  11. Sprinkle two-thirds of the grated cheese evenly over the batter.
  12. Spoon the hot bean mixture over the cheese layer, spreading it evenly.
  13. Spoon the remaining cornbread batter around the edges of the casserole dish.
  14. Sprinkle the remaining cheese over the top.
  15. Bake in the preheated oven for 30 to 35 minutes, or until the cornbread is golden brown and set in the center.
  16. Let cool for 5 minutes before serving.

Note

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven until warmed through.

Substitutions: For a vegan version, use plant-based milk and dairy-free cheese shreds. You can substitute Pinto or Small Red beans for the Idaho beans.

Variations: Add diced jalapeños or bell peppers to the bean mixture for extra flavor and color. You can also mix in black beans for a different texture.

Tips: Ensure the bean mixture is well-drained to prevent the casserole from becoming too watery. For a crispier top, broil for the last 2-3 minutes of baking, watching closely to prevent burning.
