Note
Ensure the scalded milk is cooled to lukewarm before adding to the yeast mixture to avoid killing the yeast.
The dough is ready for the first rise if an indentation remains when gently touched.
Any fruit-only jam or preserve can be used; strawberry, raspberry, or apricot work particularly well.
For a gluten-free version, use a gluten-free flour blend and ensure all other ingredients are certified gluten-free.
Store cooled rolls in an airtight container at room temperature for up to 2 days, or freeze for longer storage.
If the dough feels too sticky during kneading, add flour one tablespoon at a time. If too dry, add water one teaspoon at a time.
