Ingredients

Directions

  1. Pat the trout fillets dry with paper towels and season lightly with salt and fresh pepper.
  2. In a large skillet large enough to hold the fillets without crowding, melt 3 tablespoons of butter over medium-high heat until it foams and begins to sizzle.
  3. Place the trout fillets in the skillet, skin-side down if applicable, or flesh-side down if skinless. Sear for about 3 minutes without moving them to achieve a golden crust.
  4. Flip the fillets, cover the pan briefly for 1 minute to steam the top, then uncover and cook for another 3-4 minutes until the fish is opaque and cooked through.
  5. Remove the cooked trout from the pan and transfer to a warm plate. Keep covered to retain heat.
  6. In the same pan, add the sliced macadamia nuts. Toast them for about 30-60 seconds, stirring constantly, until lightly golden and fragrant.
  7. Remove the toasted nuts from the pan and set aside.
  8. Meanwhile, in a separate small, sturdy pan, heat enough oil for deep frying over medium-high heat until it reaches 375ðF (190ðC).
  9. Place the capers in a small metal strainer or spider. Lower them into the hot oil for just 10-15 seconds until they sizzle and crisp up.
  10. Remove the capers from the oil using the strainer and shake gently to remove excess oil. Set aside on a paper towel.
  11. Return to the trout pan. Splash in 1-2 tablespoons of dry white wine, scraping up any browned bits from the bottom.
  12. Add the fish stock (or clam juice diluted with water) and heavy cream to the pan.
  13. Bring the sauce to a rapid boil, stirring in a small taste of tomato paste and a little more butter for richness.
  14. Allow the sauce to reduce and thicken slightly, about 2-3 minutes.
  15. Spoon the warm pan sauce over the trout fillets on the serving plate.
  16. Scatter the toasted macadamia nuts over the fish.
  17. Arrange the fried capers in neat piles at either end of the fillets.
  18. Serve immediately while the capers are still crisp and the fish is hot.
