  5. In a small, heavy saucepan over medium heat, combine the cream, the remaining 1/2 cup sugar, and vanilla extract.
  6. Heat the mixture until bubbles begin to form around the edges, then remove from heat.
  7. In a mixing bowl, combine the eggs, fresh orange juice, finely grated orange peel, and salt. Whisk until smooth and light.
  8. Slowly add the warm cream mixture to the egg mixture while whisking continuously to temper the eggs.
