Description

This classic Italian focaccia is the ultimate comfort bread, featuring a shatteringly crisp bottom and a pillowy, tender crumb. Infused with aromatic dried Italian herbs and finished with a generous drizzle of olive oil, it offers a perfect balance of savory and floral notes. The dough is simple to prepare, requiring just a short rise before baking at a high temperature to achieve that signature rustic texture. Whether served warm alongside a hearty soup, as a base for caprese appetizers, or simply torn and shared with friends, this homemade bread brings an authentic touch to any table.

Directions

  1. Dissolve yeast and sugar in warm water in a small bowl; let stand for 5 minutes until foamy.
  2. In a large mixing bowl, combine 2 cups of the bread flour, salt, and dried Italian seasoning.
  3. Pour the yeast mixture and 1 tablespoon of olive oil into the flour mixture; stir until a soft, shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  5. Gradually add the remaining flour, 1 tablespoon at a time, during kneading to prevent sticking.
  6. Place the dough in a large bowl coated with cooking spray, turning once to coat the top.
  7. Cover the bowl and let the dough rise in a warm, draft-free place for 45 minutes, or until doubled in bulk.
  8. Preheat the oven to 500°F (260°C).
  9. Punch the dough down to release air bubbles.
  10. Pat the dough into an 8x10 inch rectangle on a lightly floured surface.
  11. Transfer the dough to a baking sheet coated with cooking spray and sprinkled with cornmeal.
  12. Using the handle of a wooden spoon or your fingertips, press indentations all over the top of the dough.
  13. Gently brush the dough with 1 teaspoon of olive oil and sprinkle with grated Parmesan cheese.
  14. Bake at 500°F (260°C) for 14 minutes, or until the bottom is golden brown and the top is lightly browned.
  15. Remove from oven, cut into squares, and serve warm.
